Fleur de Sel

Fleur de Sel [literally "flower of salt"] is hand-harvested sea salt skimmed from the top of salt ponds. The moist salt flakes retain some moisture due to their manner of harvesting. As a result, they retain their crystal structure when sprinkled on foods just before serving. The light, delicate flakes give a slight crunch to the food as well as a slight shimmer.
